LowCarb Protein Muffins / Mini Gugelhupf – Basic Recipe – Grundrezept


I made these extremely delicious protein cupcakes a few days ago​. I was very excited to find out that they were nothing like the other protein cupcakes or a cake they tried. The great thing about them is that you can add some more ingredients like Cocoa, Whey, Banana or other things to make the dough taste a bit different(;

So here’s the basic recipe:

ingredients:

  • 1 egg
  • 2 large table spoons of Cottage cheese (100-150g Magerquark)
  • 20 g of coconut flower
  • Some water or milk
  • 1 teaspoon of baking powder

– My protein flavdrops

– sweetener

– cinnamon

Preparation…

  1. Mix all ingredients in the bowl and stir them until you get a quite smooth dough
  2. Add some water in case your dough isn’t creamy enough
  3. Give the dough in some silicon baking forms. I used 6-8 mini cupcake forms.
  4. Put it in the oven for about 15 minutes at 180°c
  5. Give them enough time to cool down until you try to get them out of the forms

Tips:

  • When I first made them they were a bit dry. I guess that’s because of the coconut flour. I tried it with a banana in addition and 5 g of coconut flour more. Then it was very fluffy and tasty.
  • The dough is for three large cupcakes or six – eight small ones
  • You may add some protein powder to increase the amount of protein in your macros

  • 256 kcal
  • 28g protein
  • 18g carbs

Chocolate cupcakes


 Ingredients:

  • One egg
  • 170g cottage cheese (Magerquark)
  • 20 g of coconut flour
  • 10 g of weight watchers cocoa powder
  • some water
  • Sweetener
  • Baking powder
  • Cinnamon

Preparation:

  1. The same as in the basic recipe(;

Banana cinnamon Low Carb cupcakes

Ingredients:

  • One banana (100g)
  • One egg
  • 25g coconut powder
  • 150g cottage cheese (Magerquark)
  • Some water
  • Baking powder
  • 1 teaspoon of cinnamon
  • (Toffee flavdrops or pure vanilla )
